The folded bread is a Finistère bread with good nutritional value, made with a Breton wheat flour, the Fleur d'Ajonc Type 80.
The folded bread honours the local Breton production chain and, made on leaven, respects an artisanal production method. Its cap folded over the bread creates a thinly honeycombed tight mie.
The sourdough gives it excellent preservation.
Why Fleur d'Ajonc? It has become the emblem of Brittany and was once used to heat bakers' ovens!
