Pains de terroir - Traditional Range

Baker’s asthma is by far the most common occupational asthma in France.

This respiratory disease is mainly caused by the repeated inhalation of flour dust suspended in the air. During everyday operations, such as dusting the work surface with flour, very fine particles are released into the air and can then be inhaled.

Foricher – Les Moulins was among the very first mills to take action to protect bakers’ respiratory health. Since 2022, the company has offered “À VOS SOUHAITS”, a low-dusting flour designed for dusting work surfaces, with a low Pulverulence Index (PI). It is produced simply through the natural milling process of wheat.

To determine whether the particles of a dusting flour remain suspended in the air, a pulverulence index is measured by LEMPA. “À VOS SOUHAITS” does not exceed the reference index of 7, whereas commercial flours can reach indices of around 15 to 30.
